[Lecture content/flow]
① Smell the dashi, look at the color, and wonder what it is. Imagine and taste it... Out of the five senses, "sight", "taste" and "tactile" are fully activated to apply the dashi.
② You can taste 9 types in total! After tasting the dashi, season it with salt and soy sauce.
③ Let's try the dashi ingredients!
④ A full-scale model of “kelp” is also available! I will also tell you how to dismantle the bonito in the manufacturing method of "Katsuobushi".
⑤ At the end, everyone drank the freshly made “Ichiban dashi” and took a breather ^^
⑥ All participants who have completed the lecture will receive a certificate of completion from the lecturer.

Aki Kawaguchi
Lives in Tokushima Prefecture. Dashi Sommelier Academy Certified Instructor
Since he was young, he has traveled to gastronomic countries such as Italy, China, and Turkey. Invited to ordinary homes in each country where he traveled, he became captivated by "world's home cooking". Since 2017, he has been disseminating dashi, the foundation of Japanese home cooking, to people in Japan and overseas. As a dashi researcher, he is active not only in his hometown but also in various places in order to convey the message that "If you understand dashi, you will understand cooking, and your way of life will change."
A total of nearly 1,000 students participate in workshops where you can feel the deliciousness of dashi and the dashi sommelier certification course!
Manufactures and sells original dashi packs and dashi products.
Combining dashi, medicinal foods, dietary psychology, and organic ingredients, we make each person's health from food!
