​Dashi Professional This is a qualification course awarded by the Professional Academy. There are 1st to 3rd grades, and a certificate of completion is issued for each grade, and you can call yourself a Dashi Professional according to your rank and work. So far, we have produced about 4,500 Dashi Sommeliers. We have a wide range of participants, from restaurants to food manufacturers development staff, cooking classes, and those who want to master their hobbies.
